7Nov 2011 Ride: What's Cooking

Busy day, getting late, hope to make this quick.


Woke up at 4:25 and thought, hmm, maybe I could sneak in part of the day's ride before the rains come.  Unfortunately, once that thought was in my head, I couldn't get back to sleep.  Unfortunately, once up, it turned out it was already raining and the harder stuff was on the way.  So much for that grand plan.





A produce run for Community Meals, followed by grocery shopping was on the menu for the morning followed by making several weeks worth of waffles.  Carol must have her waffles for breakfast.  So, when the supply runs low, we stoke up the two waffle irons and I mix together my personal pecan waffle recipe which then keeps her happy for about 4-6 weeks depending on how many the kids consume (no, she doesn't eat them all at one time but the surplus goes into the freezer).  Given that David will be here for Thanksgiving, I imagine I'll be making another batch fairly soon.




Next, or while the waffles were cooking, I worked on a butternut squash/sweet potato soup with a chicken broth and milk base (didn't realize that this was going to be a cooking show today).  A little salt, tarragon, cayenne and sun dried tomatoes and dinner was now slowly simmering.

A little after 3:00 I was finally able to get on the road.  The rains had stopped and the afternoon was rather pleasant.  But with sunset at 5:15 now, I packed my head lamp.

Getting out was a bit of a struggle.  Waking up early followed by all the errands and cooking, sitting back and relaxing really had its appeal.  And for the first 10 miles I found myself yawing quite a bit but by mile 20 I was feeling good. 



I had hoped to get in at least 30 miles but was able to get in 35 thanks to bringing the headlamp.  If time wasn't an issue, I certainly would have gone 40.  Tomorrow should be a nice challenge as strong thunderstorms are in the forecast for a good part of the day with rain the rain the rest of the day.  An early ride tomorrow, rain or no rain, seems to be the best.

And, once back home, Rachel had already gotten fruit and bread ready to go with the soup which tasted great after the the ride.
